The Taste Of Tradition


Sambar, also spelled sambhar or sambaar, and pronounced saambaar, is a lentil-based vegetable stew or chowder cooked with a tamarind broth originating from the present-day Tamil Nadu, India.


Thur dal -200gm
Vegetables of your choice -100gm
Tomatoes -1-2(according to the size)
Small onions -7-8 shallots
Tamarind paste -11/2 tbsp
Happyos turmeric powder – 1/2tsp
Happyos sambar powder- 11/2tbsp
Happyos asafetida –generous pinch
Salt –to taste

For tempering:

Oil/ghee – 1-2 tbsp
Mustard seeds – ½ tsp
Cumin – ¼ tsp
Broken urad and channa dal -1/2 tsp
Curry leaves -1 spring
Onion shallots – 7-8 chopped
Happyos asafetida – pinch


• Wash and pressure cook the dal till soft with Happyos turmeric powder
• Wash and cut the vegetables as desired.(drumstick, brinjal,red pumpkin,raddish, carrot etc.,)
• Cook the vegetables and onions with happyos sambar powder, salt and tamarind paste
• Once the vegetables are cooked add the cooked dal to the vegetables
• Cook for 3-5 minutes to blend
• In a separate kadai, add 2 tbsp of oil/ghee, when heated add mustard, cumin, broken urad and channa dal and allow to splutter
• Then add the curry leaves and onions and fry
• Then add a generous pinch of Happyos asafetida and pour the seasoning to the sambar
• Sprinkle some cut coriander leaves and its ready to serve.
